Girl Gone Eating: Corona Cooking with Chrys

For this week's meal prep I made cheesesteak stuffed shells and roasted broccoli with garlic. I based this off of a recipe but changed it up a bit to make it mine.

The main changes I did were that first I use shaved steak instead of ground beef. I've done it before with ground beef and it's still pretty tasty and easier to work with. I found with the shaved steak I really had to work to chop it up enough to get pieces small enough to stuff in the shells and I still had a little bit of trouble with it. I also substituted light cream for the milk, cheese ends instead of cheddar and I topped it with a mixture of provolone and mozzarella. I also added mushrooms into the mix because I love them included in a cheesesteak. The recipe made enough for about 30 stuffed shells, but that did include half a package of mushrooms added.

The broccoli was very simple. I chopped up two heads. Mixed them with some olive oil, salt and minced garlic and roasted them for 15-20 minutes. I topped them with the leftover cheese in the pan from the stuffed shells.

I had a couple of the stuffed shells after everything was finished and packed, they were amazing. The cheese sauce was so decadent and rich made with the cream, I could also taste the steak flavor in it as I used the same pan. Overall it took about an hour from start to finish. I've made this before and I'm sure I'll make it again.
